You don't have to think up anything complicated to get customers. All you need is a good idea, a beautiful place and quality food with pleasant service. Rumors about a sophisticated restaurant with accommodation spread from every corner of the Trenčín region. Dubno Eat & Sleep offers modern gastronomy with an emphasis on fresh domestic ingredients. A daily menu awaits you during the week, and on Saturday and Sunday you can prepare for the weekend special. "Since I was a child, I wanted to work in gastronomy. I am from Martin, my wife is from Nová Dubnica. After leaving Bratislava, we were deciding what to do. We were looking for some buildings to buy. In the past, this place housed a table tennis hall and a restaurant. We started working on projects and doing a lot of remodeling. Thanks to my stay abroad, I knew what was going on in the world," co-owner Peter Gašperák outlined his plan years ago. “From the first day we opened, it was crazy. There are not many options in Nova Dubnica and we are the biggest. We have the widest selection of beer, there are two lounges in the back for private events. We are always coming up with something new. We change the menu twice a year, and our staff attends various trainings," he explained. Most recently, the accommodation part was added to the restaurant, where 16 rooms are available. But we came for the food. What we couldn't resist at first sight were the slow-roasted pork ribs with BBQ sauce, baked potato and coleslaw. "We focus on specialties from the grill, as we have a charcoal grill in the kitchen. Many guests have ribs, steaks, burgers and, of course, beer. We have two tanks - ten and twelve, including a varied offer from craft breweries. We currently have about ten types, so everyone will find something for themselves. This year we started cooperating with the Vŕšky brewery, where they brew our beer, which we have been developing for about a year and a half," boasted Peter Gašperák.

They try to buy raw materials from Slovak and local producers. "It's not like it used to be when you had to order a week in advance. Our meat is delivered fresh daily from Bánoviec nad Bebravou. We also have a super supplier for fruit and vegetables, which they deliver to us twice a day," he added. From the beginning, they also planned the so-called experience kitchen, but the coronavirus slowed them down. "With the opening of the hotel part, we are also planning various tasting dinners. Until now, we have organized wine and rum tastings in cooperation with our suppliers. In the summer, we hold various barbecues on the terrace. And every Wednesday we organize a competitive quiz, we are booked non-stop for a month in advance. If someone new wants to come, he has a problem, because there are always the same parties," explained the co-owner of Dubno Eat & Sleep, how they manage to unite the community of people from Nova Dubnica and the surrounding area.

In addition to high interest, they also have to deal with common concerns. "We probably won't expand the kitchen, although it would be bigger. We moved the bar a meter forward so that the staff would have more comfort when preparing drinks. It is also about communication with visitors. When we are full, we tell them straight up that they will have to wait longer. Fortunately, they are understanding, because they know that we prepare everything fresh, no semi-finished products," noted Peter Gašperák, adding that they are going to open an event section for a hundred people in the garden area.
