Like our tastes, trends in gastronomy change here and there. The so-called "street food" does not have a long tradition in Slovakia, but in recent years it has undoubtedly become a popular way to enjoy a taste bud. Mobile stalls, also known as "food-trucks", provide fast and especially quality food. This concept of business also enchanted the young chef Štefan Rybárský, who founded a mobile plant called Palmstreetboyz.
As he explained to us in the interview, he loves Asian cuisine, and that is why his business concept went in this direction.
1. Introduce yourself to the readers of the Trenčín region website. Who are you and how did you get into the gastronomy business?
We are an Asian mobile street food stand in which we offer various Asian specialties focused on, for example, Thailand, Vietnam, Japan, China, Indonesia, etc. We got into the gastronomy business about 2 years ago, when we got the idea in which we wanted to travel around Slovakia and bring people the joy of quality food. It was an impulse that helped us fulfill our dream and also open our own bistro.
2. You offer Asian street food. Why did you choose this type of cuisine?
We simply love Asian cuisine. All these different technological processes of food preparation have always fascinated us. Based on that, we decided on this very concept. At the beginning, we gained experience in Asian companies, working abroad and various internships. We focus mainly on the quality and freshness of our products. In Asia, street food is on virtually every corner, and on the contrary, many people in Slovakia have not even known it in the past. That's why we decided to go into the street food concept. It is a unique opportunity where customers can see the entire food preparation with their own eyes.
3. Which product is one of the most popular in PalmStreetBoyz?
It's hard to say, each dish is something specific, but such main headliners are our Thai red curry and Udon noodles with peanut sauce, which our customers liked very much. However, we also make weekly specials to enrich our menu every week. However, we can't help but mention our beef flank steak with rice noodles, for which people return from a wide area.
4. Have you been affected by the current difficult situation? Did you have to come up with a new creative "how to survive" way, or could you, as a food-truck, operate in normal mode?
We are certainly affected by this situation. Mainly because we could not go to various street food events that take place throughout Slovakia. As a result, we had to adapt to the situation and find a way to function and survive in this difficult time in the gastronomy sector. In the end, we chose the most ideal place for our food truck - in Prievidza. We started making deliveries all over the city, the surrounding area and the dispensing window also works. This is how we continue so far.
5. What can we find on your menu? Will vegans or "intolerant" choose yours?
We have compiled the menu so that almost everyone can eat with us. The menu also includes vegan dishes, seafood, beef and chicken. With us, the customer can easily choose what he wants. Most of our meals are lactose-free because we use only pure coconut milk in our recipes. We also offer gluten-free meals. In our menu you will also find various most famous Asian soups, such as Vietnamese Pho Bo, Thai shrimp Tom Yum or traditional Chinese sharp-sour soup. Of course, we did not forget about sweet lovers and we included two homemade desserts, namely vegan coconut pudding and exotic passion fruit cream.
6. Do you go to offer your delicacies for festivals or other cultural events?
Yes, we have been to a few events during the summer, but in the current situation it is not so worthwhile, as only a limited number of people can take part in mass events. But otherwise we like these events very much and we are happy to participate in them.
7. What do you say to the 2nd place in the TOP GASTRO equipment competition of the Trenčín Region 2021?
We are very pleased with this report and would like to thank once again all those who voted for our operation. Because only thanks to our customers have we received this award in the short time we have been in Prievidza.
8. Do you have special plans for 2022 if the situation calmed down and conditions were more favorable?
Yes of course. We plan to open our first stone plant in the near future. And when the situation allows, we would very much like to start going with our food truck again to various cultural events.
